When I apply for Social Security Disability or SSI will Social Security ask for information about my education?

Yes. Social Security will ask you how long you attended school and whether you are able to speak, understand, read and write in English and do at least simple addition and subtraction. Social Security will consider other information about how much formal or informal education you may have had through your previous work or other activities which might help you to work. They will ask if you have a GED if you did not graduate from high school.
